Chablis 1er Cru Fourchaume

The Chablis premier crus show more complexity. They will have good length in the mouth. The Fourchaume is well-known and a bi appellation. It is typically chablisien – powerful, very mineral. Unforgettable. Best to wait for 5 years, and it can be kept for 8-10 no problem.

It is excellent as an aperitif with prawns, or smoked salmon toasts. It pairs with all types of white meat, fish in general and poultry in cream, a carpaccio of scallops, veal stew, a good lobster or langoustine, sweetbreads, marinated salmon, grilled sole. Try it with goat’s cheese, and the cheeses of the Savoie region: Abondance, Beaufort, and Comté.
